Ingredients In Balsamic Cucumber Tomato Salad
- Cherry Tomatoes: I love using cherry tomatoes in this salad because they are less watery than other varieties and hold up well. Halve the cherry tomatoes before adding them to the salad. You can substitute them with another tomato variety but make sure to cut them into bite-sized pieces.
- Cucumber: You don’t need to peel the cucumbers before using them in the salad but you can if you prefer.
- Feta Cheese: Omit if you are dairy free but the feta adds a creaminess to the salad that is delicious.
- Parsley and Dill: I recommend using fresh herbs for the best flavor.
- Balsamic Vinaigrette: This easy homemade salad dressing is made with olive oil, balsamic vinegar, lemon juice, dijon mustard, salt and pepper.

This is one of the simplest salads to make. It’s packed with flavor and is a perfectly refreshing summer side dish.
Steps to make cucumber tomato salad:
- Make the balsamic vinaigrette: In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, dijon mustard, salt and pepper.
- Make the salad: In a large bowl toss together the tomatoes, cucumber, feta (optional), parsley, dill and balsamic vinaigrette. Enjoy!

It’s very easy to make this balsamic cucumber tomato salad dairy free and it doesn’t compromise flavor! Just leave out the feta cheese to make it dairy free!
Can I make cucumber tomato salad ahead of time?
I prefer to make this cucumber tomato salad right before serving to ensure freshness. I find that if I leave it in the fridge for too long, the cucumbers will become soggy and watery.
Do I need to peel zucchini for salad?
You do not need to peel the zucchini. I usually do just because that is my preference but you don’t need to. Zucchini peel is perfectly fine to eat as long as you wash it (of course).
Have extra balsamic vinaigrette?

Ingredients
- 2 cups cherry tomatoes, halved
- 2 cups cucumber, sliced (about 1 cucumber)
- ¼ cup feta cheese (omit for dairy free)
- ¼ cup fresh parsley, chopped
- 1-½ tsp fresh or dried dill, chopped
Balsamic Vinaigrette
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp fresh lemon juice
- 1 tbsp dijon mustard
- ¼ tsp sea salt
