What is a burrito bowl?
Burrito bowls are awesome alternatives to using tortillas. I like to think of them as the less messy and more healthy version of a burrito that still leaves all the good stuff. Homemade burrito bowls are so tasty and easy to customize too!
Feel free to get creative with this carnitas burrito bowl. The main base layers in this bowl are the lettuce and carnitas meat but don’t be afraid to customize ingredients depending on your preference and dietary needs. Some people love to include cheese or sour cream, I don’t but if you can tolerate dairy, go ahead!
The point is, there are many ways to create a burrito bowl so don’t be afraid to add or subtract ingredients to make the perfect recipe for you. Enjoy!
Ingredients for carnitas burrito bowl
Pork carnitas: The carnitas recipe we use is easy to make and can either be made in the Instant Pot or Slow Cooker.
Greens: I used chopped romaine lettuce but whatever leafy greens you have should work well in burrito bowls.
Cilantro lime cauliflower rice: Cauliflower rice is an awesome alternative to regular rice and this homemade cilantro lime cauliflower rice is delicious paired with the carnitas. Alternatively, you could use plain cauliflower or regular rice.
Pico de gallo: Use homemade or your favorite pico de gallo brand for this. Alternatively, you could use salsa.
Guacamole: Fresh guacamole is essential in burrito bowls in my opinion. Use your favorite recipe or premade brand here.
Sautéed bell peppers: I just sauté sliced bell peppers in a skillet for a few minutes until they’re softened. Feel free to use whatever colored bell peppers you have. You could also add sliced onion if you prefer.
How to assemble
Burrito bowls are created with various layers of flavor. I start by creating the base layer with the lettuce, carnitas meat and cauliflower rice. Then add the sautéed peppers and top with the pico de gallo and guacamole. That’s all there is to it!
Storage Tips
Burrito bowls are great for meal prepping! The ingredients stay best when stored in the refrigerator separately though so assemble once you’re ready to eat the day of.

Carnitas Burrito Bowl (Paleo, Whole30)
Ingredients
- 2 cups pork carnitas
- 2 cups cilantro lime cauliflower rice
- 4 cups romaine lettuce chopped
- 1 cup pico de gallo
- ½ cup guacamole
- 2 bell peppers sautéed
Instructions
- Assemble: In a salad bowl, layer the chopped romaine lettuce with the carnitas, and cauliflower rice. Top with pico de gallo, guacamole, and sautéed peppers.
