These popsicles have quickly become a favorite snack to have in our freezer for a refreshing pick-me-up in the hot summer afternoon. They’re even dairy free and paleo friendly!
Creamy Strawberry Pineapple Popsicles
I am one of those people who lives for the summer. It’s my favorite time of year and it always goes by way too fast here in Minnesota. One of my favorite summertime desserts is popsicles and one day I thought, “why am I not making my own?!” I had so much fun experimenting to find the perfect flavor combination for these strawberry pineapple popsicles and now I’m on a popsicle roll. Ingredients For Homemade Popsicles
These strawberry pineapple popsicles are so creamy, you’re going to forget that these are completely dairy free. Move over heavy cream, we don’t need you. Coconut milk is where it’s at!
Here are the simple ingredients:
- Strawberries
- Pineapple
- Pineapple Juice
- Maple Syrup
- Full Fat Coconut Milk
How To Make Creamy Strawberry Pineapple Popsicles
I promise homemade popsicles are very easy to make. Grab a popsicle mold, and let's get to it!
- To Make The Strawberry Layer: Add the strawberries, maple syrup and coconut milk to a blender. Blend until smooth or pulse a few times for some strawberry chunks to remain.
- To Make The Pineapple Layer: Add the pineapple chunks, pineapple juice, maple syrup and coconut milk to a blender. Blend until smooth.
- Combine the flavors: First, fill the popsicle molds about half way with the strawberry mixture. Then add the pineapple mixture. Cover the molds and insert the wooden sticks into each popsicle. If your mold doesn’t have a cover, use aluminum foil and then poke the wooden sticks through the foil.
- Freeze the popsicles: Freeze for at least 3 hours until the popsicles are solid and frozen. Run the popsicle mold under hot water to loosen the popsicles easier. Enjoy!
What Popsicle Mold Should I Use?
I recommend this popsicle mold that I got on Amazon. It comes with wooden sticks and has a cover for easy assembly. Any popsicle mold should work though so feel free to use whatever you have! If your popsicle mold does not have a cover, use aluminum foil to cover and hold the sticks in place instead.
