Ingredient Notes for Dense Bean Salad

  • Chickpeas, cannellini beans, kidney beans - Use a mix of these three types of beans for a variety of texture and colors. I like to use canned beans for convenience but you could cook dried beans from scratch if you wanted.
  • Cherry tomatoes - Halve them for juicy bursts of flavor.
  • Cucumber - You don’t need to peel the cucumber before adding it to the salad.
  • Red onion - Provides a mild bite; soak in cold water for 10 minutes to mellow the flavor. You could also use pickled red onion if you want!
  • Red Bell Pepper - I like to use red bell pepper for the vibrant color but any bell pepper would work.
  • Kalamata olives - You can add kalamata, black, or green olives for extra flavor.
  • Fresh parsley - Fresh herbs are best here but in a pinch you can substitute the ¼ cup fresh parsley with 1 tablespoon dried parsley.
  • Feta (optional) - You can use dairy-free feta or regular feta if preferred.

For the Italian Dressing:

  • Olive oil – Use extra virgin for the best taste.
  • Red wine vinegar and lemon juice – Adds tang and balances the richness of the oil.
  • Garlic – Freshly minced for a bold kick.

How To Make 3 Bean Salad

In a large bowl, combine the chickpeas, great northern beans, kidney beans, cherry tomatoes, cucumber, red onion, roasted red peppers, olives, and parsley.

Make Dressing

In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, basil, crushed red pepper, salt, and pepper.

  • 1 (15 oz) can chickpeas drained and rinsed
  • 1 (15 oz) can great northern beans drained and rinsed
  • 1 (15 oz) can kidney beans drained and rinsed
  • ½ cup cherry tomatoes halved
  • ½ cup cucumber chopped
  • ¼ cup red onion finely chopped
  • ¼ cup bell peppers chopped
  • ¼ cup Kalamata olives chopped
  • ¼ cup fresh parsley chopped

Homemade Italian Dressing

  • ¼ cup olive oil extra virgin
  • 2 tablespoon red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon dried oregano or Italian seasoning
  • ½ teaspoon dried basil
  • salt and pepper to taste
