Hamburger Soup
There’s a theme with my recipes, in that they’re all pretty simple to make. I know a lot of you don’t want to be in the kitchen all day preparing a meal so I try to keep things around here easy but still delicious. This Easy Hamburger Vegetable Soup is one of those comforting recipes that is a great go-to meal when you don’t know what to make for dinner. It’s also tasty as leftovers and convenient to pack for on-the-go lunches.
I developed this recipe kind of by accident. I wanted to make a soup that would last us through the week and I needed to use up some ingredients we had in the fridge. Thus came this hamburger vegetable soup recipe! We’ve made this soup a couple of times now and it’s quickly becoming one of our favorite soups to make this time of year. Ingredients for easy hamburger vegetable soup
- Ground Beef
- Yellow Onion
- Carrots
- Green Bell Pepper
- Green Beans
- Beef Broth
- Water
- Tomato Paste
- Beef Bouillon Cubes
- Garlic Cloves
- Dried Parsley
- Dried Basil
- Salt & Pepper
How to make easy hamburger vegetable soup
- Brown ground beef and chopped onion in a dutch oven or large stock pot over medium high heat. About 5 to 8 minutes until no pink remains. Drain any fat.
- Add carrots and bell pepper. Cook until vegetables are softened, about 10 minutes.
- Add the rest of the ingredients and stir to dissolve the bouillon cubes. Simmer for 20 minutes. Enjoy!
Can I use other vegetables?
Yes, of course you can! That’s one of the great things about soup is that it’s so easy to customize it to how you like it. You could try adding other vegetables like corn, zucchini, peas, potatoes, tomatoes...etc. The list goes on, feel free to substitute what you have on hand.
Can I use other broth with beef?
Yes, you can use chicken broth or vegetable broth if you don’t have beef broth on hand. I recommend using beef bullion cubes also so the beef flavor will still pull through, it will just change the flavor slightly.

Easy Hamburger Vegetable Soup
Ingredients
- 1 lb ground beef
- 1 yellow onion chopped
- 4 carrots peeled and chopped
- 1 green bell pepper chopped
- 1 can cut green beans (14.5 oz)
- 4 cups beef broth (32 oz)
- 2 cups water
- 1 can tomato paste (6 oz)
- 2 beef bouillon cubes
- 2 garlic cloves minced
- 1 tsp dried parsley
- 1 tsp dried basil
- salt & pepper, to taste
