There’s a theme with my recipes, in that they’re all pretty simple to make. I know a lot of you don’t want to be in the kitchen all day preparing a meal so I try to keep things around here easy but still delicious. This Easy Hamburger Vegetable Soup is one of those comforting recipes that is a great go-to meal when you don’t know what to make for dinner. It’s also tasty as leftovers and convenient to pack for on-the-go lunches.
I developed this recipe kind of by accident. I wanted to make a soup that would last us through the week and I needed to use up some ingredients we had in the fridge. Thus came this hamburger vegetable soup recipe! We’ve made this soup a couple of times now and it’s quickly becoming one of our favorite soups to make this time of year. Yes, of course you can! That’s one of the great things about soup is that it’s so easy to customize it to how you like it. You could try adding other vegetables like corn, zucchini, peas, potatoes, tomatoes...etc. The list goes on, feel free to substitute what you have on hand.
Yes, you can use chicken broth or vegetable broth if you don’t have beef broth on hand. I recommend using beef bullion cubes also so the beef flavor will still pull through, it will just change the flavor slightly.
