    Easy Stuffed Sweet Potato Tacos

    These easy stuffed sweet potato tacos have quickly become one of my favorite meals to serve to family and friends. They are rich in nutrients and the sweet potato boats add a bit of jazz to everyday tacos. Stock up on a big bag of sweet potatoes and beef because you’ll want to make these all week!

    Stuffed Sweet Potato Tacos

    Sweet potatoes make the perfect satisfying boat for your favorite taco toppings. Easily swap out tortillas for the baked sweet potatoes and you might not want to go back. These stuffed sweet potato tacos are simple to make and seriously delicious! Top your tacos off with Dairy Free Cilantro Lime Dressing for an extra special treat!

    Ingredients for Stuffed Sweet Potato Tacos

    • Sweet Potatoes - The star of the show. They have a hint of sweetness (hence the name) and are creamy and full of nutrients.
    • Ground Beef - If you don’t have ground beef on hand, you can use ground turkey instead. 
    • Onion - Chopped onion for extra flavor.
    • Garlic - I love using fresh minced garlic in taco meat for an added depth of flavor that works well with the onion and tomatoes.
    • Tomatoes - I usually use crushed tomatoes from a can out of convenience but you could use fresh tomatoes instead!
    • Spices - a unique blend of dried spices gives life to the taco meat.
    • Toppings - I love topping these stuffed sweet potatoes with dairy free cilantro lime dressing, tomatoes, cilantro, dairy free sour cream. You can also add feta or your favorite cheese if not dairy free!

    How to Bake Sweet Potatoes

    The first thing to do when preparing to bake sweet potatoes is to make sure you clean them. Scrub the potatoes under water and then pat them dry. Pierce the potatoes with a knife or fork. Place them on a baking sheet and bake at 425°F for about 45 minutes until they are tender. Cut the potatoes lengthwise and stuff with taco meat. That’s it!

    How To Make Easy Stuffed Sweet Potato Tacos

    1. Bake the sweet potatoes according to the directions above.
    2. Meanwhile, make the beef taco filling. Heat a pan over medium heat. Cook the beef, onion, and garlic until the beef is browned and cooked through. This will take about 5 minutes.
    3. Once the beef is cooked, drain the excess fat from the pan if necessary. Then add the tomatoes, water and spices. Let simmer for 10 minutes on low.
    4. When the sweet potatoes are cool enough to handle, make slits on the top of each of the potatoes. Open the potatoes and lightly scrap the insides with a fork to fluff and to make room for the toppings.
    5. Fill each sweet potato with the taco meat and then with desired toppings. Serve warm.

    Stuffed Sweet Potato Taco Topping Ideas

    You can top these stuffed sweet potato tacos with your favorite regular taco toppings or try something new. My favorite way to eat them is to top with my Dairy Free Cilantro Lime Dressing, dairy free sour cream, fresh tomatoes, fresh cilantro and feta cheese.  

    How to Store Baked Sweet Potatoes

    Store these sweet potato tacos in the refrigerator in an airtight container. They should stay good for up to 3 days. To reheat leftovers, use the microwave or warm in the oven.

    Ingredients

    • 4 sweet potatoes cleaned and scrubbed

    Taco Meat

    • 1 lb ground beef (16 oz)
    • ¼ yellow onion, chopped (2 oz)
    • 1 garlic clove, minced (5 g)
    • ¾ cup crushed canned tomatoes
    • 2 tbsp water
    • ¾ tsp chipotle powder
    • ¼ tsp paprika
    • ¼ tsp cumin
    • ¼ tsp salt
    • ¼ tsp chili powder
    • ¼ tsp cayenne pepper (optional, adjust for spice preference)

    Topping Suggestions

    • Dairy Free Cilantro Lime Dressing (find recipe here)
    • tomatoes
    • cilantro
    • sour cream (dairy free or regular)
    • feta cheese (omit for dairy-free)
