Egg: just one egg is used in this simple cookie recipe!
Coconut Sugar and Maple Syrup: these cookies are naturally sweetened with coconut sugar and maple syrup.
Peanut Butter: I use natural, unsweetened creamy peanut butter.
Cocoa Powder: I use unsweetened cocoa powder. You could also use cacao powder instead.
Baking Soda: to give a little rise to the cookie.
Salt: a small amount goes a long way.
Mini Chocolate Chips: I use these dairy free mini chocolate chips. You could use your favorite type of chocolate chips or chunks.
Chopped Walnuts: I am of the opinion that walnuts were made for chocolate cookies and brownies.
How to make double chocolate cookies
Step 1: In a large bowl, mix together the egg, coconut sugar, and maple syrup using a hand mixer or whisk. Then add in the peanut butter, cocoa powder, baking soda, and salt. Stir to combine.
Step 2: Fold in the chocolate chips and chopped walnuts. Place the dough in the refrigerator to chill for 10 minutes.
Step 3: Meanwhile, preheat the oven to 350°F. Line a baking sheet with parchment paper, set aside.
Step 4: Using a cookie scoop or your hands, roll about 2 tbsp of the dough into balls. Place on the prepared baking sheet. Flatten the balls slightly and add additional chocolate chips and walnuts to the tops if desired.
Step 5: Bake for 8-10 minutes. Let rest for 5 minutes before moving the cookies to a cooling rack.

- ½ cup unsweetened cocoa powder (could use cacao powder instead)

- ¼ tsp sea salt
