    Gluten Free Banana Waffles

    What’s your favorite breakfast food? These Gluten Free Banana Waffles are top on my list of favorites. I don’t think I could get sick of eating them. Seriously. Gimme all the waffles!

    I typically make them on Saturday or Sunday to celebrate the weekend and love how they pair nicely with my coffee. There’s just something special and cozy about them that I love. They’re easy to make too, dairy and gluten free, and can be frozen for a quick grab-and-go breakfast during the week. What’s not to love?!

    Ingredients for gluten free banana waffles

    There are 10 simple ingredients that go into making these banana waffles. Everything should be easily found at your local grocery store and each ingredient is gluten and dairy free.

    • eggs
    • almond milk
    • maple syrup
    • vanilla extract
    • apple cider vinegar
    • gluten free 1-to-1 flour (I used this one)
    • baking powder
    • cinnamon
    • salt

    Directions for making gluten free banana waffles

    These waffles will take only minutes to make and will disappear quickly from your plate (yes, they’re that good).

    1. Preheat your waffle maker following manufacturer’s instructions.
    2. In a medium bowl, mix together the eggs, almond milk, maple syrup, vanilla extract, and apple cider vinegar. 
    3. In a separate bowl, mix together the flour, baking powder, and cinnamon.
    4. Slowly stir in the dry ingredients mixture to the wet ingredients. Then add the mashed banana and mix until combined. The batter will have clumps from the banana, that’s okay.
    5. Pour about ⅓ of the batter into the waffle maker (this will depend on the size and type of waffle iron you have). Cook until the waffle is golden brown. Top with desired toppings like fresh fruit, nut butter or syrup. Enjoy!

    Freezer-friendly banana waffles

    These banana waffles are easy to freeze for later. Just simply put them in a freezer-safe bag in the freezer. When ready to eat, reheat them using a toaster or microwave.
