Quiche For Brunch and Breakfast
If you’re anything like me, you love breakfast and brunch. One of my favorite, and often underrated, brunch items is the classic quiche. Eggs are a staple in our house and I have always been a fan of a good quiche.

Why You’ll Goat Cheese Crustless Quiche
Kid friendly: My daughter loves this goat cheese quiche recipe. One slice of this quiche is the perfect size for her tiny hands and it’s easy to sneak veggies in the egg filling without the kids knowing. It’s a win-win.
Customizable: It’s easy to customize the mix-ins for this quiche so if there’s something you don’t like, feel free to switch it up with something else. I’ll go over more flavor ideas in the section below, so keep reading.
What’s In Goat Cheese Crustless Quiche
- Eggs
- Coconut Milk
- Ham
- Goat Cheese
- Green Onion
- Spinach
- Salt and Pepper
How To Make
Step 1: Preheat the oven to 350°F and grease a 9-inch pie pan with nonstick cooking spray.
Step 2: Add the eggs, coconut milk, salt and pepper to a medium bowl. Using a whisk or hand mixer on low, mix together until eggs and coconut milk are combined.
Step 3: Place the ham, green onion, spinach and ¼ cup goat cheese on the bottom of the pie pan. Reserving a few pieces of each mix-in to sprinkle on top.
Step 4: Pour the egg mixture on the mix-ins and then sprinkle the rest of the goat cheese and reserved toppings on top.
Step 5: Bake for about 35 minutes or until the center is set. Serve warm.
Additional Add-Ins
I get it, we can’t all like the same thing. So if you want to add a little something extra or swap out an ingredient, here are a couple ideas!
Add more greens - chop up some fresh broccoli florets, sauté, and add them into the egg filling for some extra greens. Broccoli can add water to the quiche so make sure to sauté the broccoli before adding to the quiche to avoid it getting too watery.
Switch up the cheese - Don’t have goat cheese? You could try using feta or swiss cheese instead.
Use a different meat - You could try cooked sausage or bacon instead of ham. If you prefer, leave the meat out for a veggie filled quiche instead.
Can I make this dairy free?
The recipe calls for goat cheese but you can omit for dairy free.
Can I use regular milk?
If you prefer, you can use regular whole milk or another unsweetened non-dairy milk instead of coconut milk.
