I have always been a fan of carrots and luckily my family likes them too! They are rich in nutrients and are a great source of beta carotene. They also taste delicious in soup! When I think of winter soup, I think of carrot soup or Roasted Tomato Basil Soup.

Ingredients for Healing Slow Cooker Carrot Soup
Carrots: There are about two pounds of carrots in this recipe. That is about 10-12 large carrots. Save time by peeling and chopping the carrots ahead of time if you want.
Onion and Garlic: I haven’t met a soup where onion and garlic have not been part of the ingredient list. They are essential and add a delicious savory flavor to the carrot soup.
Ginger: For best results, use fresh ginger in this recipe.
Vegetable Broth: Make sure your vegetable broth is vegan friendly if that is important to you.
Coconut Milk: The coconut milk adds a creamy element to the carrot soup. I use light coconut milk to keep the soup lower in calories.
Apple Cider Vinegar: The vinegar elevates the flavor profile of the soup and is a great gut healthy ingredient.
Spices: The unique blend of coriander, turmeric, paprika, salt and pepper adds the best flavor to the carrot soup.
How to make carrot soup a slow cooker
The slow cooker method is what I use most often when I make this recipe. I like to let the carrots and other ingredients cook throughout the morning so it’s ready for lunch. If you don’t have a slow cooker or would just prefer to make the carrot soup on the stove top, I will go over those directions after this.
Here’s how to make this healthy carrot soup using the slow cooker:
- Add all of the ingredients to the slow cooker. Cook on high for 3-4 hours or low for 4-6 hours, until the carrots are soft.
- Blend with an immersion blender until smooth and creamy texture. If you don’t have an immersion blender, you can use a blender instead. You might have to blend in batches. Season with salt and pepper to taste. Serve warm and enjoy!
How to make carrot soup on the stovetop
This soup is still easy to make on the stovetop and it actually takes less cooking time.
Here’s how to make this healthy carrot soup on the stovetop:
- Heat 1-2 tbsp of olive oil in a large stock pot over medium heat. Add the chopped onions and minced garlic. Stir and cook until the onions are softened (about 5-7 minutes). Add the chopped carrots and cook for about 5 minutes.
- Add the broth, coconut milk, and rest of the ingredients to the pot. Stir and reduce the heat to simmer for about 30 minutes. The soup is done when the carrots are soft.
- Use an immersion blender or regular blender to blend the soup until smooth. Serve warm and enjoy!
Serving suggestions
I like to make this carrot soup as either the main dish or a healthy side. I will usually serve it with a fresh salad (like my Shaved Brussels Sprouts with Kale and Apple recipe) or gluten free bread.
How to store
This carrot soup will last in the refrigerator for up to four days or for several months in the freezer.
