Simple to make: The Instant Pot has become one of my favorite kitchen gadgets because of recipes like this one. These carnitas only need to cook on high pressure for 1 hour! Alternatively, you can make them in the slow cooker if you prefer, which I will explain in more detail below.

Ingredients for instant pot pork carnitas
- Pork shoulder (pork butt)
- Cumin
- Coriander
- Kosher salt
- Black pepper
- Chili powder
- Paprika
- Yellow onion
- Garlic
- Orange Juice
- Lime Juice
Instant Pot Instructions
Step 1: To make the seasoning: Mix the cumin, coriander, salt, pepper, chili powder, and paprika in a bowl. Place the pork cubes in a large bowl and mix with the seasoning. Make sure all sides of the pork are covered in the seasoning.
Step 2: Cook: Place the pork in the Instant Pot and top with the minced garlic, onion, orange juice, and lime juice. Cover with the lid and set to high pressure for 60 minutes, followed by a natural release (about 30 minutes).
Step 3: Pull apart: Remove the pork from the instant pot and shred with forks. The pork should pull apart easily with a fork.
Step 4: Optional crispiness: Follow these steps if you want your pork to be crispy. Preheat the broiler. Place the shredded pork on a rimmed baking sheet and pour about ¼ cup of the remaining juices from the pot on top of the pork. Place the baking sheet in the oven for about 4 minutes then toss and broil for another 4 minutes, until desired crispiness is reached.
Step 5: Before serving: add the desired amount of remaining cooking liquid from the pot back back with the shredded pork.
