    No Bake Almond Joy Oat Cups

    No bake almond joy oat cups are the indulgent healthy treat you’ve been searching for. They’re no-bake and ready to be enjoyed within minutes straight from the freezer. Made with oats, almond butter, coconut, and dairy free chocolate.

    Ingredients for Almond Joy Oat Cups

    • Oats - I use gluten free old fashioned oats but you can use whatever plain oats you have on hand.
    • Almond butter - I like to use almond butter since these are almond joy oat cups but you could substitute it with peanut butter for a slightly different taste.
    • Coconut flakes - I use unsweetened coconut flakes so these oat cups aren’t overly sweet. 
    • Honey - The sweetener in this recipe is honey. You can substitute the honey with maple syrup if preferred.
    • Chocolate - I use dairy free semi-sweet chocolate.
    • Coconut oil - the coconut oil hardens in the freezer creating a chocolate coconut layer on top.
    • Sliced almonds - these are optional but add texture and additional almond flavor to the oat cups.

    How To Make

    Mix together the ingredients for the coconut oat layer. Then divide the oat mixture into 12 muffin cups (I prefer to use this silicone muffin tray). Press down with your fingers or a spoon for an even oat layer.

    Next, place the chocolate and coconut oil in a microwave safe bowl. Heat for 15 seconds and stir. Continue to heat in intervals until the chocolate and oil have melted.

    Spoon the chocolate over the coconut oat layer and sprinkle sliced almonds and coconut flakes on top. Freeze for 20 minutes or until the chocolate is hardened.

    Storage

    Store oat cups in the freezer for up to 3 months. I like to keep them in the freezer for a quick easy snack.

    Equipment

    Ingredients

    Coconut Oat Layer

    • 2 cups gluten free old fashioned oats
    • ¾ cup coconut flakes I use unsweetened
    • ⅓ cup honey

    Chocolate Layer

    • 6 oz semi-sweet or dark chocolate I use dairy free Enjoy Life chocolate
    • 2 tsp coconut oil

    Topping

    • coconut flakes
    • sliced almonds
