    No Bake Raspberry Energy Balls

    What is there not to love about energy balls? These no bake raspberry energy balls are simple to make, delicious and packed with protein to keep you energized. They’re great as an on-the-go snack while running errands, after school snack or healthy dessert.

    I especially loved energy balls as a new mom. Taking care of a baby is hard work and it wasn’t always easy to find time to eat. I would keep some of these energy balls on my nightstand for a snack while breastfeeding in the middle of the night when I was too tired to go to the kitchen.

    They also store really well in the freezer. I made a couple batches as I was preparing for the baby’s arrival so I knew I’d have an easy snack to eat when she was here.

    Ingredients for No Bake Raspberry Energy Balls

    • Natural peanut butter or almond butter
    • Pitted medjool dates, pitted
    • Freeze dried raspberries
    • Rolled gluten free oats (can use regular rolled oats)
    • Cinnamon
    • Ground flaxseed meal
    • Vanilla extract
    • Slivered almonds
    • Salt

    How to make raspberry energy balls

    1. Add pitted dates to a high powered blender or food processor and pulse until broken down to small pieces.
    2. Add the rest of the ingredients and pulse until well combined.
    3. Using a medium cookie scoop or your hands, form about 18 1-inch bite sized balls. Optional - roll some or all of the balls in crushed freeze dried raspberries to coat. Or just leave uncoated. They’re delicious either way.
    4. Place the balls onto a cookie tray or plate lined with parchment paper and place in the refrigerator to chill. After about 30 minutes, take out and place balls in a container or baggie to store in the fridge or freezer. Enjoy!

    Where do you find freeze dried raspberries?

    You might remember my recipe for Baked Blueberry Lemon Donuts which used freeze dried blueberries. I bought those freeze dried blueberries and these freeze dried raspberries in the dried fruit section at my local Target. Freeze dried fruit is also a great snack on its own. Besides freeze dried raspberries, I’d recommend trying freeze dried mango and freeze dried strawberries.

    How to store energy balls

    You can store these energy balls in the fridge or the freezer, though I prefer the freezer. They will keep better and they're just as delicious straight from the freezer. You can let them sit out for a few minutes on the counter if they are too hard to bite into.

    Ingredients

    • 6 pitted medjool dates
    • ⅓ cup freeze dried raspberries (plus more for optional coating)
    • ⅓ cup rolled gluten free oats (can use regular rolled oats)

    Notes

    • If your dates are hard to the touch, soak them in hot water for 15 minutes to soften them up.
    • For the coating, crush the freeze dried raspberries by placing them in a ziplock baggie and roll over them with a rolling pin. Place the crushed freeze dried raspberries in a small dish and roll the balls to coat.
