There’s nothing like a warm healthy breakfast to start your day off right! This breakfast bowl is cooked in a large skillet and made with chopped sweet potato, sausage, apples, and spinach. Not only is it made with paleo friendly ingredients, it tastes great too!

Ingredients Needed
- Sausage - you can either use sausage, ground turkey, or ground pork. For convenience, you can try using ground meat or sausage that is already cooked.
- Apple - I like to use either Honeycrisp or Pink Lady varieties but you can use whatever apples you prefer.
- Sweet potato - the sweet potatoes not only taste delicious, but are also rich in nutrients.
- Spinach - I use baby spinach leaves usually but you can chop the spinach up if you prefer to have smaller pieces in your breakfast bowl.
- Spices - Italian seasoning, ground turmeric, garlic powder, salt and pepper are the spices that go in this recipe.
Substitutions and Notes
- Paleo: Make sure to use paleo friendly ingredients and to check labels on the sausage you use.
- Vegan: You can make this recipe without the sausage or meat to make it vegan friendly.
- Spinach: If you want to make this recipe without spinach, try swapping it with something else like bell pepper, mushrooms, or brussels sprouts.
- Toppings suggestions:
- green onion
- avocado
- egg (fried, hard boiled, soft boiled, poached)
- aioli
- goat cheese or feta
How To Make
If the sausage or ground meat you are using isn’t cooked yet, cook as directed. Then set it aside to add to the skillet later.
Add 1 tbsp of olive oil to the large skillet. Heat on medium and add the sweet potato and apple. Stir and cook for about 5-10 minutes, until the sweet potato and apple are tender.
Add the cooked meat back into the skillet along with the garlic powder, Italian Seasoning, turmeric, salt and pepper. Lastly add the baby spinach. Heat and stir until the spinach is wilted and then remove from heat.
Serve warm and top the breakfast bowl with an egg, avocado, or green onions.

- 1 sweet potato peeled and diced
- 1 apple peeled, cored and diced
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- ½ tsp salt

- ¼ tsp ground black pepper
- 1 cup baby spinach
