Ingredients for Spicy Sesame Peanut Zucchini Noodles
Zucchini: I use this spiralizer to make the easy zucchini noodles at home but some grocery stores also sell zoodles pre-made. You can usually find them in the produce section or in the frozen vegetable section.
Peanut Butter: I use natural creamy peanut butter in this recipe. You could try chunky but of course, the sauce will be chunky also then.
Coconut Aminos: Coconut aminos is the soy sauce alternative I use regularly in sauces and stir-frys.
Rice Vinegar: Make sure to use rice vinegar and not white vinegar in this recipe. Rice vinegar has a delicate and sweet flavor that helps the peanut sauce taste so good.
Garlic: Of course there’s a little bit of that lovely garlic flavor!
Sesame Oil: The sesame oil is key to the peanut sauce. It brings an unmistakable flavor so don’t skip this!
Honey: Honey brings out a little more sweetness in the dish.
Red Pepper: Crushed red pepper flakes are added to this recipe for a little heat. If you don’t like spicy food, feel free to skip.
Water: We add ¼ cup of water to the peanut sauce to thin. Feel free to add more or less depending on your preferred consistency.

How to make Spicy Sesame Peanut Zucchini Noodles
Step 1: Heat 1 tbsp of olive oil over medium heat in a large skillet. Add the spiralized zucchini noodles. Stir and cook for about 3-5 minutes, until the zucchini is softened and warm. Remove from heat and set aside.
Step 2: In a small saucepan, combine the peanut sauce ingredients. Warm over low heat and whisk continuously until combined and the sauce is warmed.
Step 3: Pour the heated sauce over the prepared zucchini noodles. Toss to combine and top with chopped green onions and sesame seeds. Serve immediately.
How Do You Make Zoodles?
Zoodles, or zucchini noodles, are very simple to make. Just use a spiralizer like this one with the whole zucchini. You don’t even need to peel the zucchini. If you don’t have a spiralizer, you can thinly slice the zucchini instead or use regular pasta for this recipe.
