    Turkey Meatball Salad with Spicy Avocado Dressing

    Say hello to the best turkey meatball salad that I have ever had! Guys, it’s really good!! I could eat this for lunch everyday and not be sad about it. It's the middle of winter here in Minnesota but sometimes I just crave a fresh salad to remind me of what summer feels like. Summer is coming soon-ish, right?! 

    Ingredients for salad

    This Turkey Meatball Salad with Spicy Avocado Dressing has everything a delicious salad should have. It’s packed with fresh vegetables like spinach, radishes, tomatoes, and cucumbers. Not to mention, the turkey meatballs. Which, let me just say, are great on their own as well! They are made with ground turkey, shallots, garlic, sage, coconut flour, salt and pepper. All ingredients that are easy to find at the grocery store or you might even have them already in your kitchen.

    Now let’s get to the star of the show, the Spicy Avocado Dressing.  I created this creamy jalapeño avocado dressing to compliment and add a little jazzy-ness into this salad. It’s awesome and completely dairy-free! I also love the color of this dressing, the red tomatoes pop against the fresh green color. If you have any leftover dressing, use it as a dip for vegetables the next day, just remember to store it in the fridge!

    The base of the salad is made of spinach, cucumbers, tomatoes, and radishes. I think every one of these veggies adds something to this salad but feel free to switch up the vegetables based on your preferences.

    Turkey Meatball Salad with Spicy Avocado Dressing

    Ingredients

    For the turkey meatballs:

    • 16 oz ground turkey
    • 1 shallot, chopped
    • 2 garlic cloves, minced
    • 1 tsp ground sage
    • 1 tbsp coconut flour
    • ¼ tsp black pepper
    • ¼ tsp sea salt
    • extra virgin olive oil

    For the spicy avocado dressing:

    • 1 avocado
    • ½ cup fresh cilantro
    • ½ jalapeño pepper, seeded (for more spice, keep seeds)
    • ⅓ cup extra virgin olive oil
    • 1 tbsp fresh lime juice
    • ½ tsp sea salt
    • ⅔ cup water

    For the salad:

    • 4 cups spinach
    • 8 radishes, thinly sliced
    • 12 red grape tomatoes, chopped
    • 1 cucumbers, thinly sliced

    Instructions

    For the turkey meatballs:

    • Preheat oven to 375°F and prepare a rimmed baking sheet with parchment paper.
    • In a medium bowl, combine all of the ingredients for the meatballs, except the olive oil. Mix until combined.
    • Form 2 inch balls and place them on the prepared baking sheet. Lightly brush olive oil over the meatballs.
    • Bake meatballs for 25 minutes or until cooked.

    For the spicy avocado dressing:

    • Add all the ingredients for the dressing into a blender or food processor and blend until smooth and creamy.

    For the salad:

    • Toss the spinach, radishes, tomatoes, and cucumbers with the Spicy Avocado Dressing. Divide between plates and serve with the turkey meatballs on top.
