Lemon Blueberry Cookies

These soft lemon blueberry cookies are the perfect combination between cookie and muffin tops. They’re also made with oat flour and completely gluten free and dairy free!

Cream the butter

First, cream the butter and coconut sugar. Then add the egg, blueberries, and lemon zest until no clumps remain.

Mix

Mix the oat flour mixture together with the wet ingredients. Cover and set in the freezer for 30 mins.

Cookie dough

Prepare a baking sheet with parchment paper. Form cookie balls with a cookie scoop or spoon.

Bake

Bake at 350 degrees F for 8-10 minutes. Let rest before placing the cookies on a cooling rack. Enjoy!
