Lemon Oat Crumble Bars

These tangy lemon oatmeal bars are made with dairy free coconut milk, gluten free flour, oatmeal and fresh lemons.

Mix the topping

Start by mixing together the ingredients for the topping which will be used for the base and topping of the bars.

Bake the base

Split half of the oatmeal crumble mixture and pour it into the prepared baking pan. Bake for 12 minutes.

Assemble and bake

Make the lemon filling and spread it onto the base. Sprinkle the reserved crumble topping over the lemon filling. Bake for 22 minutes.
