Preheat your waffle maker following manufacturer’s instructions.
In a medium bowl, mix together the eggs, almond milk, maple syrup, vanilla extract, and apple cider vinegar.
In a separate bowl, mix together the flour, baking powder, and cinnamon.
Slowly stir in the dry ingredients mixture to the wet ingredients. Then add the mashed banana and mix until combined. The batter will have clumps from the banana, that’s okay.
Pour about ⅓ of the batter into the waffle maker (this will depend on the size and type of waffle iron you have). Cook until the waffle is golden brown. Top with desired toppings like fresh fruit, nut butter or syrup. Enjoy!
