- 4-6 zucchini, spiralized into noodles
- 1 tbsp olive oil
Heat 1 tbsp of olive oil over medium heat in a large skillet. Add the spiralized zucchini noodles. Stir and cook for about 3-5 minutes, until the zucchini is softened and warm. Remove from heat and set aside.
In a small saucepan, combine the peanut sauce ingredients. Warm over low heat and whisk continuously until combined and the sauce is warmed.
Pour the heated sauce over the prepared zucchini noodles. Toss to combine and top with chopped green onions and sesame seeds. Serve immediately.
