Instant Pot Pork Carnitas

This Instant Pot Pork Carnitas recipe is the perfect combination of flavor and ease. Seasoned pork cooked in under 2 hours covered in fresh orange and lime juices to create that irresistible flavor.

  • 4 pounds pork shoulder (pork butt) cut into large cubes
  • 2 tbsp cumin
  • 1 tsp coriander
  • 1-¼ tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp chili powder
  • ¼ tsp paprika
  • 1 yellow onion diced
  • 5 garlic cloves minced
  • 1 cup fresh squeezed orange juice
  • ¼ cup fresh squeezed lime juice


  • To make the seasoning: Mix the cumin, coriander, salt, pepper, chili powder, and paprika in a bowl. Place the pork cubes in a large bowl and mix with the seasoning. Make sure all sides of the pork are covered in the seasoning.
  • Cook: Place the pork in the Instant Pot and top with the minced garlic, onion, orange juice, and lime juice. Cover with the lid and set to high pressure for 60 minutes, followed by a natural release (about 30 minutes).
  • Pull apart: Remove the pork from the instant pot and shred with forks. The pork should pull apart easily with a fork.
  • Optional crispiness: Follow these steps if you want your pork to be crispy. Preheat the broiler. Place the shredded pork on a rimmed baking sheet and pour about ¼ cup of the remaining juices from the pot on top of the pork. Place the baking sheet in the oven for about 4 minutes then toss and broil for another 4 minutes, until desired crispiness is reached.
  • Before serving: Add the desired amount of remaining cooking liquid from the pot back back with the shredded pork.
